KENNY LEUNG KUI CHOY

October 29, 1937 - March 7, 2026


“I entered this world crying, I leave it with ease” were some of Dad’s last words. On March 7, 2026, Kenny passed away peacefully at the age of 88 years. He was a dearly loved husband, father, grandfather, brother, uncle, entrepreneur, restauranteur, land developer, lab technologist, lover of food, ballroom dancer, world traveller, gardener and friend. Before his passing, he expressed satisfaction in all he had accomplished in life, always saying that his family was his greatest achievement and joy.

Kenny will be forever held deeply in the hearts of his family: wife Rebecca, daughters Cindy (Mark Gray), Lindy (Rob Rabichuk), and Anna (Clint MacArthur), grandchildren Dani Rabichuk (Marcel), Ryan Rabichuk and Quinn MacArthur, sisters Sue Sem Yan and Sue-On Hillman (Bill), many nieces and nephews and friends. He is predeceased by his parents Soo and Jade Choy, and brother Gene Chin.

Dad came to Canada in 1959 at age 22 to join his father Soo Choy, who had already been working in Canada for many years. He convinced his high school sweetheart Rebecca to leave Hong Kong to follow him here, and so began their 62 years of marriage together.

Dad always worked very hard to care for his family. For many years he held two jobs – working at the Westman Lab by day, then at the family restaurant Soo’s Chop Suey House evenings and weekends. On the side, his entrepreneurial spirit blossomed and he enjoyed developing various business ventures, including Glendale Homes Park, the Loft, Prairie Lane Shops, Richmond Restaurant, the Shops at 15th and Rosser, Redwood Plaza, and most recently, the small homes pocket neighbourhood at 235 Glen Avenue.

It wasn’t until 1986 when Dad was diagnosed with acute leukemia that he developed a different approach to life. After beating cancer into remission, he retired from the Westman Lab, and really began living.

Mom and Dad travelled the world, visiting over 50 countries and stepping foot on every continent, including Antarctica. So many wonderful memories were made when we travelled together as a family exploring international destinations including Europe, China, Hawaii, Mexico, and the Caribbean. But when asked what place he found most beautiful, Dad named Canada as his favourite.

In their golden years, Mom and Dad enjoyed ballroom dancing and made many dear and lasting friendships during this era of their lives. Going out for coffee to meet with friends was also a very important part of his routine.

Gardening was another passion and spring and summer months were always spent making the garden beautiful. Dad was so proud of his home and his garden, and loved to open it up to share with other people.

Sadly, the effects of the cancer treatments caught up with Dad and he started dialysis last summer. He received incredible care from the Brandon Renal Health Clinic and we want to thank them for their kindness and attention. We also want to thank the staff at Assiniboine Centre for the gentle and compassionate care they provided to him during his final days. And finally, we are so deeply indebted to CancerCare Manitoba for giving us 40 bonus years of life with Kenny.

A family graveside service has already taken place and we are planning a celebration of life to be held at the end of June.
